Natural water contains not only a lot of minerals, but also oxygen. If the water is processed further and boiled on top of that, the gases evaporate from it. What remains is water that simply doesn’t taste good. The water hardness is less important for the taste of your espresso than the oxygen content. Too much lime or particularly mineral-containing water also spoils the coffee water.
